Love Mexican food! One of the easiest to prepare is a taco….preferably a soft taco. Ideal for a quick meal or snack. Just prep ingredients and keep in the ref just like how North Americans keep sandwich fillings in their refs.
Start of with soft taco wraps. Used to get Gourmet Village soft tacos but found these Spanish made ones in S&R recently. Packaging looks very Mexican but as you scrutinize the multilingual formation at the back, Barcelona is the origin.
Not bad for Php 74 plus for a pack of 8.

TBWs no sweat salsa
Prepare the fillings. TBW likes tomato and cilantro salsa. Dice fresh red tomatoes and remove seeds. Add leaves of cilantro. Mix apple cider vinegar, olive oil, brown sugar, salt and freshly cracked black pepper. Proportion according to taste. Options: Add sliced lettuce, diced white onions, red/green bell pepper, corn kernels even couscous. Dressing can vary according to preference. Tomato sauce, lemon or chili based.
Any protein can be used. Fish or chicken fillet, ground beef, left over steak slices, or any savory filling that suits your fancy.
Grated cheese can be added. TBW tries to eliminate this for health reasons.
Sour cream with a dash of lemon can also be used as a base or a topper.
Fill soft taco with your favorite stuff and wrap like a roll or fat cigar. Secure with a toothpick if need be. Sorry….don’t have a photo of the finished product. Was so excited to eat it that I forgot about the photo op =)
